Buffalo cauliflower bites
These are a perfect work-from-home snack. Almost as easy as 1, 2, 3!
Ingredients:
1 head of cauliflower
buffalo sauce of choice (I used about half a bottle of this.)
oil of choice (I used 1 stick of Earth Balance vegan butter here, but EVOO or coconut oil work well too.)
flour of choice (Ever since going to Brazil and having farofa there, I’ve loved incorporating manioc flour into my recipes. Regular all-purpose flour is perfectly fine, though for that extra grainy crunch, to me, this is my go-to. You can eyeball how much flour to use. I went with roughly 1/2 cup.)
garlic powder (to taste)
sea salt (to taste)
nut milk of choice (You’ll only be using a splash of this, so it really doesn’t matter what you choose.)
Instructions:
Preheat oven to 450 degrees Fahrenheit.
Roughly chop cauliflower into bite-sized chunks and place in large (gallon) Ziploc bag. Melt the vegan butter (if using), and add to Ziploc bag. Add all other ingredients, seal the bag, and shake thoroughly to combine.
Roast for 20 minutes, flip with a spatula to avoid burning, and roast for another 20-30 minutes until they get to your desired level of crunchiness.
Enjoy as is or with celery sticks and your dip of choice!
